Processing technique

Our processing technique inherits from the traditional Russian and Iranian technique, integrates the modern European technique, and is in strict compliance with the HACCP system, as well as the highest international food processing sanitation standard. The whole production process is monitored to ensure stable and safe processing operation.    
High quality caviar is made with purely manual procedure. Sturgeon roes must remain fresh during the whole production process. A dozen steps including retrieving ovary, roe selection, roe washing, dripping, and salting must be finished in a very short time in a low temperature environment by professional caviar masters. The key step of caviar production is salting. It takes years of experience to master the proper salting time. We provide fine-tuned processing for each fish, so that the beauty of each Kaluga Queen caviar roe is ready to bloom.
